How long does it take to fix a car after an accident?

I was recently in a hit and run that damaged my car. The damages didn’t seem extensive, but when I took my car to the repair shop they said it could take three weeks to fix my car. One month later, my car still isn’t ready to be picked up. How long should it take to fix a car?
