I have a $1,000 deductible for my health insurance. If I was injured in an accident, would I need to pay the $1,000 towards my health-care deductible first? Or would my medical payments coverage cover the $1,000?

If you are injured in an accident, your medical payments coverage will pay your medical bills until your coverage is exhausted. From there, your health insurance will cover any remaining costs.
